Drop cookies- chocolate chip

Let’s be honest, cookies of all kinds can warm your soul through all the storms in life. It should also interest you to know that they are one of the easiest to make at home.

My personal favourite is the classic chocolate chip drop cookie (which is also chewy inside).

Ingredients:

1. Butter (moist)- 1/2 cup
2. Castor sugar- 3/4 cup
3. Egg- 1
4. Vanilla essence- 1 tsp
5. Flour- 1 1/4 cup
6. Cornstarch- 1 tbsp
7. Baking soda- 1/2 tsp
8. Salt- 1/2 tsp
9. Chocolate chips- 1 1/2 cups
10. Almonds (chopped & toasted)- 1/2 cup

Directions:

1. In a mixing bowl, add the butter and the sugar. Mix them until you get a creamy consistency.
2. Break an egg into the mixture along with the vanilla essence and mix them until they are smooth.
3. Add the flour, baking soda and salt form a smooth mixture.
4. Now comes my favourite step!!! Add the cornstarch to the mixture. This makes sure your drop cookies turn out crisp on the outside and chewy on the inside.
5. Throw in the chocolate chips! A little extra does no harm.
6. Add the chopped and toasted almonds too. You may also substitute this with cashews, raisins or pecans. Your call.
7. What you now have is a dough like consistency.
8. Make scoops of 2 tablespoons each and form them into a ball. Repeat for all.
9. Place these small dough balls in a baking tray and set them to chill for an hour in the refrigerator. This step is important because now your cookies will unfold evenly and uniformly in the oven
10. After an hour, place around 6 dough balls in the tray with a 2 inch gap between each one (Yes, they flatten wonderfully).
11. Pre-heat the oven to 190° Celsius for 15 mins and slide in that heavenly tray.
12. Your drop cookies are done in 20 mins. Remove the tray and cool the cookies.

The dough balls flatten in 10-12 mins and this is what you see!

Any other cookie will have the same method to follow. The basic ingredients remain the same and the exotic ones differ from person to person.

Guilt tip: Once your dough balls are made, you may put them aside in packets to freeze. You will therefore always have emergency cookies for a blue day! Thank me later.
